Pearl River Wood Carvers Guild

Yesterday, I had Taco Soup at the Pearl River Wood Carvers Guild Annual Show in Jackson, MS where my husband entered his Red Tail Hawk and won First Place and People's Choice Award. The people were really warm, kind and welcoming. They really made us feel special.

The recipe follows:

1 pkg. Hillshire farm turkey smoked sausage
1 medium onion chopped
1 can (16oz) pinto beans, drained
1 can (15.5oz) kidney beans, drained
1 can (15oz) black beans, drained
1 can (15.25oz) whole kernel corn, drained
1 can (14.5oz) tomatoes, undrained
1 can (14.5oz) chicken broth
2 1/2 Cups Water
1 pkg. (1.25oz) taco seasoning mix

Optional Toppings:
Shredded reduced-fat Cheddar Cheese
Crushed baked tortilla chips
